Pumpkin Chia Pudding

Ingredients:
1 cup unsweetened almond milk (or milk of choice)
½ cup pumpkin purée (homemade or canned)
3 Tbsp chia seeds
2–3 Tbsp pure maple syrup (adjust for sweetness)
1 tsp vanilla extract
1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger)
Pinch of sea salt
Optional Toppings:
A dollop of Greek yogurt or coconut yogurt
Toasted pecans or walnuts
Fresh apple slices or pomegranate seeds
Sprinkle of cinnamon
Instructions:
Whisk the base:
In a medium bowl, whisk together almond milk, pumpkin purée, maple syrup, vanilla, pumpkin pie spice, and sea salt until smooth.Add chia seeds:
Stir in the chia seeds until evenly combined.Chill to set:
Cover and refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes to prevent clumping.Serve and top:
Spoon into individual bowls or jars. Add your favorite toppings.
