Pumpkin Chia Pudding

Prep Time: 10 minutes (plus 4+ hours to set)

Ingredients:

  • 1 cup unsweetened almond milk (or milk of choice)

  • ½ cup pumpkin purée (homemade or canned)

  • 3 Tbsp chia seeds

  • 2–3 Tbsp pure maple syrup (adjust for sweetness)

  • 1 tsp vanilla extract

  • 1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger)

  • Pinch of sea salt

Optional Toppings:

  • A dollop of Greek yogurt or coconut yogurt

  • Toasted pecans or walnuts

  • Fresh apple slices or pomegranate seeds

  • Sprinkle of cinnamon

Instructions:

  1. Whisk the base:
    In a medium bowl, whisk together almond milk, pumpkin purée, maple syrup, vanilla, pumpkin pie spice, and sea salt until smooth.

  2. Add chia seeds:
    Stir in the chia seeds until evenly combined.

  3. Chill to set:
    Cover and refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes to prevent clumping.

  4. Serve and top:
    Spoon into individual bowls or jars. Add your favorite toppings.
