Peanut Butter Chia Pudding

Ingredients (2 servings)

  • ½ cup chia seeds

  • 1 ½ cups unsweetened almond milk (or milk of choice)

  • 2 tablespoons natural peanut butter (creamy or crunchy)

  • 1–2 tablespoons maple syrup or honey (optional for sweetness)

  • 1 teaspoon vanilla extract

  • A pinch of sea salt

Instructions

    • In a medium bowl or jar, whisk together almond milk, peanut butter, maple syrup, vanilla, and salt until smooth and creamy.

    • Add chia seeds

    • Stir in chia seeds until evenly distributed.

    • Let the mixture sit for 10 minutes, then stir again to prevent clumping.

    • Chill overnight

    • Cover and refrigerate for at least 2 hours, or overnight for best texture.

    • Serve and top

    • Stir well before serving.

    • Optional toppings: banana slices, crushed peanuts, dark chocolate shavings, or a drizzle of extra peanut butter.
