Peanut Butter Chia Pudding
Ingredients (2 servings)
½ cup chia seeds
1 ½ cups unsweetened almond milk (or milk of choice)
2 tablespoons natural peanut butter (creamy or crunchy)
1–2 tablespoons maple syrup or honey (optional for sweetness)
1 teaspoon vanilla extract
A pinch of sea salt
Instructions
In a medium bowl or jar, whisk together almond milk, peanut butter, maple syrup, vanilla, and salt until smooth and creamy.
Add chia seeds
Stir in chia seeds until evenly distributed.
Let the mixture sit for 10 minutes, then stir again to prevent clumping.
Chill overnight
Cover and refrigerate for at least 2 hours, or overnight for best texture.
Serve and top
Stir well before serving.
Optional toppings: banana slices, crushed peanuts, dark chocolate shavings, or a drizzle of extra peanut butter.
